Hummus Caesar Dressing

Did you know that Caesar salad is a dish that originated in Mexico around a hundred years ago? Many variations have been made since, but they usually contain animal products such as eggs, parmesan, Worcestershire, anchovies, mayonnaise and sometimes bacon or grilled chicken.

This recipe is 100% vegan, gluten-free and made with whole-food ingredients. If you have yet to find a healthy plant-based alternative to the classic Caesar dressing, you will be delighted with this one!

The star ingredients of this rich and creamy vinaigrette is hummus, which replaces mayonnaise perfectly. Here’s the other ingredients:

  • Lemon juice
  • Olive oil
  • Minced garlic
  • Dijon mustard
  • Capers
  • Maple syrup
  • Nutritional yeast
  • Salt & pepper

Pretty healthy, right?

For the hummus, you can either buy it at the store or make your own. I prefer the second option because I have the BEST hummus recipe and it’s very simple to make. What you need is chickpeas, tahini, lemon juice, garlic, olive oil and salt. That’s it! And of course, a food processor.

Capers are optional, but I just love the briny, tangy flavour they bring to a dish and they kind of mimic anchovies. I use some of the brine (the liquid in which they marinate) in the dressing, and the capers as a topping.

To make the salad, I chop romaine lettuce or kale, place it in a large bowl and toss it with the dressing. I finish up by adding croutons, this 4-ingredients vegan parmesan and a fresh squeeze of lemon.

Hummus Caesar Dressing (Vegan)

Ingredients
  

  • 1/2 cup plain hummus (store bought or DIY)
  • 1/4 cup fresh lemon juice
  • 3 tbsp olive oil
  • 2-3 garlic cloves, minced
  • 2 tbsp nutritional yeast
  • 1 tbsp capers, minced (+ 1tbs of its brining juice) optional
  • 3 tsp maple syrup
  • 2 tsp dijon mustard
  • 1 pinch salt & pepper, each to taste

Instructions
 

  • Add all ingredients to a bowl and whisk to combine.
  • If needed, add a little bit of water until the mixture is pourable, but not too thin.
  • Taste to adjust the seasonings.
  • Use immediatly or store in the fridge for up to 7 days.
