It’s popsicle season and these dairy-free Raspberry Coconut Creamsicles are the perfect summer treat! They are super creamy from the coconut milk and bursting with sweet and tangy flavor from the raspberries.
When I was a kid, my mom would make similar iced treats using yogurt, which were so yummy and refreshing. Last week during the heat wave, I thought I should try and replicate them, but with vegan ingredients.
I used coconut cream as a base and they turned out so rich, soft and creamy. I whipped up these popsicles using leftover raspberries I had in the freezer and added maple syrup as a sweetener, as well as a dash of vanilla. No artificial flavor, refined sugar, food coloring or other crap found in most store-bought products.
Below you will find the recipe with 2 different alternatives; a tie-dye version (like in the photo), and a simple all-blended version, which tastes just as good.
If you’ve never made popsicles before, I highly recommend it! It’s just the easiest thing to make, and that, even if you’re the worst cook. I guaranty you and everyone in your family will enjoy these healthy treats and they will be gone in no time!
Raspberry-Coconut Creamsicle
Ingredients
- 1 can coconut cream (or full-fat coconut milk)
- 1 cup raspberry (fresh or frozen)
- ¼ cup maple syrup (or sweetener of choice)
- 1 tsp vanilla extract
- 1/4 cup water
Instructions
Tie-dye style
- Add the coconut cream, vanilla and half the maple syrup to a bowl and whisk to combine.
- In a food processor, add the raspberries and leftover maple syrup and blend. If the mixture is too dense, add 1/4 cup of water and continue beating until smooth.
- Poor the raspberry puree into the popsicle molds, making sure it's evenly distributed. Do the same with the coconut mixture, filling each mold to the top.
- With a spoon or popsicle stick, give each mold a stir to create a nice tie dye effect.
- Put in the freezer for at least 4 hours. Unmold by running under warm water and enjoy!
Blended (simple method)
- Place all ingredients into a blender or food processor and mix well. Poor into popsicle molds and freeze minimum 3 hours. These creamsicles won't have a tie dye pattern but will taste just as good!
