Date & Banana Energy Bites

Aren’t these energy balls so adorable? Not only that, but they are heavenly to taste and have a doughy, chewy and crunchy texture. Each one is a perfect single serving made with whole-food ingredients. Just enough to provide you with an energy boost throughout the day.

I’ve been making energy balls for a couple of years now, trying out different ingredients and variations, but this one is my favorite creation so far.

The sticky base is made out of dates, banana, cocoa powder and peanut butter, in which are then added cashews, oat, coconut shreds, flax and hemp seeds, all pulverized in a food processor.

There’s no need to add oil or sugar since this snack is naturally sweetened and rich in healthy fats.

These balls are like a mix between a granola bar and a hippie cookie dough. Perfect for an easy grab-and-go breakfast, snack or dessert.

Another nice thing about these little gems is that they’re totally customizable. You can pretty much add any nuts, seeds, grains or dried fruits you want to them and they will always turn out fantastic.

No cashews? Sub with peanuts, hazelnuts, walnuts, macadamia, etc. Not into coconut? Skip it. Out of hemp seeds? Replace by something you have in your pantry, maybe chia or pumpkin seeds. Love chocolate? Treat yourself and add some! It’s that simple, guys.

Date & Banana Energy Bites

Ingredients
  

  • 1/2 cup pitted Medjool dates
  • 1 ripped banana
  • 1/3 cup peanut butter
  • 1/4 cup cacao powder
  • 1 cup cashews unsalted
  • 1/2 cup oat
  • 1/4 cup shredded coconut
  • 1/4 cup hemp hearts
  • 1/4 cup flax meal
  • 1 tsp vanilla extract
  • pinch of salt

Instructions
 

  • Add the dates, banana, peanut butter, cacao powder and vanilla to a food processor and mix until a sticky dough is formed.
  • Add the remaining ingredients and pulse until combined – there should be small bits of nuts left, but not too big. Be careful not to over-process so it doesn’t get too sticky or greasy. If needed, finish mixing the dough by hand in a separate bowl until ingredients are evenly combined.
  • Transfer mixture to refrigerator or freezer to chill and firm up a bit, about 30 minutes.
  • Remove from refrigerator and shape the dough into 1-inch balls. 
  • Store in the fridge for up to 2 weeks in an airtight container. Freeze for longer term storage.
